This green sauce is going to be heaven for all the avocado lovers! Perfect to serve with meat, chicken, empanadas, chips, roasted veggies…
Ingredients:
- 2 avocado, peeled
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 1 jalapeño, chopped
- 1 cup of cilantro
- 1 cup of parsley
- 2 tbsp of mayo
- 2 tbsp of olive oil
- 1 tbsp of white vinegar
- A pinch of salt
Instructions:
- Wash the cilantro and parsley and chop both. Don’t worry about the size, you’ll blend them later.
- The onion can be purple if you like it more, chop them also n big chunks. Just enough to make it easier to blend.
- With the jalapeño, you can add two if you want this sauce extra spicy. Make sure to take out the seeds before using it.
- In a food processor or big blender, add the two avocados, chopped onion, parsley, cilantro and jalapeño.
- Give them 1-2 pulse to chop them even more and agg the mayo olive oil, white vinegar and salt to taste.
- Feel free to add more mayo if you want it creamier or a tiny bit more of oil if you want a thinner consistency.
How to make the perfect baked potatoes for this sauce?
You will need:
- 4 large potatoes
- 4 tbsp of butter
- Ground chili to taste
- Black pepper to taste
- Salt to taste
Instructions:
- Preheat the oven to 190 degrees C.
- Melt the butter and mix in all the condiments.
- Cut the potatoes, you can either peel them or leave the crust!
- Pour the melted butter all over the potatoes in a baking sheet
- Bake the potatoes for 25 minutes or until soft.
