Fresh guacamole? Yes, please! Learn how to make some tasty burritos at home and enjoy having something different for dinner.
Ingredients:
For the guacamole:
- 2 ripe avocado
- 1 onion, small
- 1 tomato, chopped
- 4 tbsp of lime juice
- 2 tbsp of olive oil
- 2 tbsp of mayo
- 1 tbsp of fresh cilantro, chopped
- A pinch of salt
For the burrito:
- 4 large tortillas
- 1 ½ cups of cheese, your favorite one
- Homemade guacamole
- 2 beef steaks
- 4 tbsp of butter
- 2 garlic cloves, chopped
- Salt to taste
- Black pepper to taste
Instructions:
For the guacamole:
- Smash your avocados to make them easier to blend. If not soft enough, the guacamole won’t be as creamy and smooth as it should.
- Chop both your onion and tomato. I recommend using purple onion but any works great.
- In a food processor or a blender, mix all your ingredients. If you prefer a heavy creamy guacamole, add 1-2 tbsp of mayo more.
- Want to spice things up? Add some hot sauce, totally optional.
- Blend your ingredients until smooth.
- When ready, set aside to use later.
For the steaks:
- In a large skillet, over low heat, add the butter and wait until it melts.
- Cover the steaks with salt and pepper to taste.
- When the butter is melted, place the steaks in the skillet and add the chopped garlic. Let them cook in the butter.
- Cook the meat as you like and when ready, set aside and cut into medium pieces.
To assemble:
- In a large tortilla, add some guacamole, cheese and steak pieces. Adding chunks of avocado gives it more texture. Roll and heat it a bit.
Serve while hot.
