Ingredients
- ½cup of sweet potato chunks
- 1cup of fresh spinach leaves
- 1tbsp of freshly ground pepper
- 1tbsp of olive oil
- Salt to taste
Method
- In a bowl, add sweet potato chunks, olive oil and salt.
- Bake at 300F for 20 min.
- In a pan, add olive oil and heat it.
- Add spinach leaves, baked sweet potato chunks, pepper and salt.
- Sauté for 2-3 min.
- Serve hot.
