Sweet Potato and Spinach Salad

Ingredients

  • ½cup of sweet potato chunks
  • 1cup of fresh spinach leaves
  • 1tbsp of freshly  ground pepper
  • 1tbsp of olive oil
  • Salt to taste

Method

  1. In a bowl, add sweet potato chunks, olive oil and salt.
  2. Bake at 300F for 20 min.
  3. In a pan, add olive oil and heat it.
  4. Add spinach leaves, baked sweet potato chunks, pepper and salt.
  5. Sauté for 2-3 min.
  6. Serve hot.
