Ingredients
- 3-5 large potatoes, cleaned
- 1 tbsp of extra virgin olive oil
- ½ tbsp of thyme
- ½ tbsp of dill
- 3 tbsp of chopped red bell pepper
- 1 tbsp of freshly ground pepper
- Salt to taste
Method
- Cut the potatoes on one side of it and make sure that the potatoes are not completely sliced, but the knife should goes through it until two-third of the height of the potatoes.
- In another bowl, mix all the ingredients.
- Stuff the mixture in between the half-cut potato slices.
- You need to do it carefully, so that the potato slices are not separated.
- Bake at 350F for 35 min.
- Serve hot.
