Potato Salad

2 pounds potatoes

1/2 cup mayonnaise

1 tablespoon yellow mustard

2 teaspoons dried oregano

1/4 teaspoon black pepper

1 teaspoon salt

1 onion (chopped)

2 hard-boiled eggs
Method:

 

  1. Wash and peel the potatoes. Boil them in large sauce pan for 20 minutes until tender; drain them.
  2. Chop the potatoes; add them into a large bowl.
  3. Peel and chop the hard boiled eggs; add them into the bowl.
  4. Add mayonnaise, mustard, onions, oregano, salt and pepper into a bowl. Mix well.
  5. Set the salad in the fridge for about two hours.
