Chicken and Waffles

This classic Southern recipe is going to help you please all your juicy and crispy fried chicken cravings!

Ingredients:

For the chicken:

  • 10 pieces of chicken
  • 2 cups of all purpose flour
  • 1 cup of cornstarch
  • 3 cups of buttermilk
  • 3 tbsp of paprika
  • 2 tbsp of onion powder
  • 2 tbsp of garlic powder
  • 1 tbsp of cayenne pepper
  • 2 tbsp of oregano
  • Black pepper to tast
  • Salt to taste
  • Oil to fry

For the waffles:

  • 2 cups of all purpose flour
  • 1 1/2 cups of buttermilk
  • 1/2 cup of butter, melted
  • 1/2 cup of sugar
  • 2 eggs
  • 2 tsp of baking soda
  • Salt to taste
  • Honey to serve

Instructions:

For the chicken:

  1. In a large container with lid, place all the chicken pieces. I recommend using wings and breasts but use any piece you like.
  2. Season the chicken with salt and black pepper to taste.
  3. Pour the buttermilk all over the chicken and let it marinate in the refrigerator for at least 3 hours. After about an hour, flip the chicken pieces to make sure all of them are completely coated with buttermilk.
  4. In a bowl, add the previously sifted all purpose flour and cornstarch. Stir to combine.
  5. Mix all the spices with the flour and feel free to add more cayenne pepper if you want your chicken spicy.
  6. Remove the chicken from the buttermilk and cover each piece with the flour mixture. If you like a thick crust, double dip each piece of chicken into the buttermilk and flour mixture.
  7. In a frying pan, heat about 2-3 cups of oil.
  8. When already hot, start to fry the chicken, about two pieces at a time. Don’t try to fry too many at the same time of the oil temperature will drop and the chicken won’t be as crispy.
  9. When completely golden, take the pieces out and keep frying. When all the pieces ready, set aside.

For the waffles:

  1. Preheat a waffle iron.
  2. Separate the eggs, you will need the yolks and egg whites in different cups.
  3. In a bowl, beat the egg whites until fluffy, set aside. You can do this by hand or with an electric mixer.
  4. Take another bowl and combine all the dry and wet ingredients. Mix to get an even batter.
  5. Add the fluffy egg whites and fold them into the waffle batter.
  6. Cook the waffles until golden brown.

To assemble: For each plate, serve a warm waffle, one or two pieces of chicken on top and drizzle some honey on top to give it extra flavor!
