Learn how to make these yummy arancini balls at home! You can make them small, perfect for an appetizer or large ones to serve at dinner.
Ingredients:
- 1 cup of rice
- 200 g of mozarella cheese, cubed
- 100 g of ham, cubed
- 2 cups of breadcrumbs
- 1/2 cup of all purpose flour
- 2 eggs, beaten
- 1 onion, chopped
- 2 tbsp of butter
- 2 tbsp of parsley, chopped
- Salt to taste
- Pepper to taste
- Oil to fry
Instructions:
- Cook your rice as usual, and don’t forget to condiment it with salt and pepper. When ready, set aside to use it later.
- In a large bowl, add your rice while still warm and the butter; smash the rice as you were making mashed potatoes. For this you can use a fork, a masher or even the back of a spoon.
- Incorportate the mozarella cheese, ham, chopped onion and parsley to the bowl with rice. Stir to combine all the ingredients. Feel free to add any other kind of cheese that you like.
- Place the bowl into the refrigerator for at least 1 hour. This will make the assembling process easier.
- Prepare three deep dishes, one with the beaten eggs, another one with the all purpose flour and a third one filled with breadcrumbs.
- Take the rice and make little balls, about 2 tbsp big.
- Dip each rice ball into the all purpose flour, then egg, then breadcrumbs. Repeat the same with all the rice balls.
- Place them into the refrigerator for another 30 minutes.
- After about 25 minutes, take a frying pan and place it over medium heat. Add about 2 cups of oil.
- When the oil is hot enough, start to fry the arancini balls until golden brown.
Serve while warm.
