Learn how to make the perfect baked eye of round to serve with your favorite kind of sauces and side dishes.
Ingredients:
- 4.4 lbs of
eye of round - 2 garlic cloves, minced
- 1 tsp of garlic powder
- 1 cup of red wine
- 2 tbsp of Worcestershire sauce
- 1 tbsp of olive oil
- 2 springs of Rosemary
- Black pepper to taste
- Salt to taste
Instructions:
- In a large bowl, combine the minced garlic, garlic powder, cup of red wine, Worcestershire sauce, olive oil, black pepper to taste and salt to taste. Stir to combine all the ingredients.
- Add the piece of eye round inside the bowl and make sure you cover all the meat with the sauces mixture. Don’t leave any spot without sauce!
- Place in the refrigerator and leave it, preferably, overnight. If you need to have the eye of round ready the same day, leave it in the refrigerator at least for 2 hours to absorb the flavor.
- Remove the bowl from the refrigerator and wait for the meat to go room temperature, about 25 minutes.
- While you are waiting, preheat the oven to 180 degrees C (356 degrees F).
- In a large baking pan, place the piece of meat in the center and add the sauces mixture into the pan to cook it with it. Also, add a spring of Rosemary on each side. If you don’t like Rosemary just skip this.
- Bake for 20 minutes, then low the heat to 160 degrees C (320 degrees F) and continue cooking the eye of round for another hour.
- Take off the oven and cut some slices to check the how is the meat, if you like it well done, you might need to bake it for another 20 minutes or so.
