Ingredients:
- 2 cups of all-purpose flour
- 1 cup of buttermilk
- ½ cup of butter, cold
- 1 cup of cheddar cheese, shredded
- ½ cup of parmesan cheese
- 1egg, whisked
- 2 tbsp of water
- 2 tsp of baking poder
- 2 tbsp of sugar
- A pinch of salt
Instructions:
- Preheat the oven to 190 degrees C.
- In a large bowl, sift in your all-purpose flour. It is important to sift the flour to avoid large lumps in the batter.
- Incorporate the cheddar cheese, parmesan cheese, baking powder, sugar and salt into the bowl. Stir to combine.
- Add in the cold butter. Using a fork or a knife, you will start to cut the butter into smaller pieces while mixing it with the other ingredients. Keep doing it until you get a sand texture.
- Pour the buttermilk and start to combine to get a soft dough. If you a have a stand mixer with a hook, here is when you want to use it.
- Sprinkle some flour on a flat surface and start to knead the dough.
- Knead for 10 minutes. You might be able to spot some butter but that is ok.
- Roll the dough to about ½ inch thick and cut squares, circles or triangles. Use the shape you prefer.
- Place the scones on a baking sheet.
- Mix the whisked egg with 2 tbsp of water to create an egg wash.
- Brush the scones with some egg wash and sprinkle a bit more of cheese on top.
- Bake for 15 minutes or until golden.
- Enjoy your cheesy scones!
