This chicken curry is really easy to make and you don’t need as many ingredients as you might think. Also it is a great chance to use any chicken leftovers that you have at home. Get creative in the kitchen and start to cook different things!
Ingredients:
- 4 large tortillas
- 500 g of chicken breast
- ½ cup of cream cheese
- Handful of spinach
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 tsp of curry powder
- A pinch of salt
- Black pepper to taste
- Olive oil to cook
Instructions:
- In a large skillet, over medium heat, add some olive oil and wait until hot.
- Cook your chicken breast using just salt and black pepper to taste. We will add the remaining spices later.
- When the chicken is ready. Set aside to let it cool down.
- As soon as you are able to touch the chicken without getting burn, start to shred it into small pieces.
- In a large pot, over low heat, add some olive oil again, the chopped onion and minced garlic cloves. Stir and wait until fragrant.
- Add in the shredded chicken, cream cheese, curry, salt and pepper. Combine really well. You want a creamy texture and a bright yellow color.
- Cook for about 15 – 20 minutes. Remember the chicken is already cooked so you just need to add some more flavor.
- Heat the tortillas in a non-stick skillet with some spinach on top, this way both ingredients are going to be kind of warm. Don’t over heat or it will be hard to pick.
- Place your tortilla with spinach in a plate and add some curry chicken on top.
- Roll it tight or you can also just fold it.
Serve warm and enjoy!
