Bacon Avocado Frittata

INGREDIENTS
4 strips bacon
8 whole eggs
1/3 cup heavy cream (80 mL)
Sea salt and black pepper to taste
1/3 cup cubed bell pepper (52 grams)
2 cups chopped spinach (75 grams)
1/3 cup halved grape tomatoes (58 grams)
1 whole avocado, sliced
Chives, chopped (optional)

DIRECTIONS

  1. Preheat oven to 350° F (175° C)
  2. In a large bowl, whisk together eggs and
    cream. Season with salt & pepper and set aside.
  3. Add bacon to a medium sized oven safe pan
    and cook until slightly crispy, approximately 3-4
    minutes.
  4. Remove the bacon, chop, and remove all but 2
    tablespoons of the bacon fat.
  5. Add the bell pepper to the pan and cook until
    softened. Add the spinach. Stir until just wilted,
    about 1-2 minutes.
  6. Add in egg mixture. Stir to combine
    everything together and top eggs with bacon,
    tomatoes and avocado slices.
  7. Let sit on burner for 3 minutes.
  8. Transfer pan to oven and bake for 10-15
    minutes or until the frittata has set.
  9. Garnish with chives, slice, and serve!

NOTES
Frittata slices can be stored in the fridge in a container for up to three days.
