This is a simple yet flavorful and vibrant macaroni salad that makes it a perfect side dish for a barbecue.

Ingredients:
2 cups macaroni
1 cup mayonnaise
½ cup carrots (diced)
½ cup green peas
¼ cups red bell peppers (diced)
¼ cup yellow bell peppers (diced)
½ cup sweet corn
½ tsp. black pepper
1 ¼ tsp. dried oregano
Method:
- Boil the macaroni for 10 minutes or until tender.
- Boil carrots, peas, red bell peppers, yellow bell peppers and sweet corn for about 5 minutes or until the vegetables are softened.
- In a medium size bowl, add in the cooked macaroni.
- Toss in the boiled vegetables into the bowl. Mix them together.
- Add in mayonnaise, black pepper and ground oregano. Mix until well combined.
- Cover the salad with plastic wrap. Set the salad in the fridge for about an hour.
