Ingredients:
1 15-oz can of garbanzo beans
¼ cup sunflower seeds
2 tbsp olive oil
2 tbsp lemon juice
handful of fresh cilantro and parsley
½ white onion
2 cloves garlic
2 tsp coriander
2 tsp cumin
1 tsp salt
½ tsp ground black pepper
2 tbsp hemp seeds
Topping:
¼ cup tahini
Directions:
- Preheat oven to 375ºF.
- Blend first the garbanzo beans and sunflower seeds in a food processor. Add the olive oil and lemon juice and blend. Next add the rest of the ingredients and blend all at once.
- Using your palms, shape ¼-cup pieces of falafel dough into flat disks.
- Place on a greased baking sheet. Brush each falafel with some extra olive oil.
- Bake for about 20 minutes, flipping halfway through and making sure falafels are crisp.
- Serve with couscous, cucumbers and vegetables.
- Drizzle warm tahini on top.
