Baked Vegan Falafel

Ingredients:
1 15-oz can of garbanzo beans
¼ cup sunflower seeds
2 tbsp olive oil
2 tbsp lemon juice
handful of fresh cilantro and parsley
½ white onion
2 cloves garlic
2 tsp coriander
2 tsp cumin
1 tsp salt
½ tsp ground black pepper
2 tbsp hemp seeds

Topping:
¼ cup tahini

Directions:

  1. Preheat oven to 375ºF.
  2. Blend first the garbanzo beans and sunflower seeds in a food processor. Add the olive oil and lemon juice and blend. Next add the rest of the ingredients and blend all at once.
  3. Using your palms, shape ¼-cup pieces of falafel dough into flat disks.
  4. Place on a greased baking sheet. Brush each falafel with some extra olive oil.
  5. Bake for about 20 minutes, flipping halfway through and making sure falafels are crisp.
  6. Serve with couscous, cucumbers and vegetables.
  7. Drizzle warm tahini on top.
