Curry Flavored Vegetable Fritters

A huge variety of snacks can be made with vegetables. One of them is fritters. Here is a healthy vegetable fritters recipe with a twist of taste. We will use homemade curry powder to enhance the flavor of the fritters.

Ingredients (Serves 6)

Ingredients for homemade curry powder:
¼ teaspoon cumin seeds
¼ teaspoon coriander seeds
2 dried red chilies
1 bay leaf
2 cardamom

Ingredients for fritters:
¼ cup grated carrot
¼ cup grated cauliflower
¼ cup minced cabbage
¼ cup grated capsicum
1 thinly sliced onion
1 egg
½ teaspoon garlic paste
½ teaspoon ginger paste
Salt to taste
¼ cup chickpea flour
1 teaspoon paprika powder
1 teaspoon homemade curry powder

Instructions for curry powder:
1. Fry all the spices on low flame for 5-8 minutes. Let them cool for some time.
2. Grind everything into a fine powder.

Instructions for fritters:
1. Preheat the oven at 400 degrees F.
2. Mix all the ingredients in a big mixing bowl.
3. Place a baking paper on the baking tray. Take 2 teaspoons of the vegetable mix on your hand. Make as thin patty as possible. Place the patties on the baking paper.
4. Bake for 10 to 12 minutes. Then flip the vegetable fritters and bake for another 10 minutes.
5. The vegetable fritters are ready. Serve hot.
