Raisin Cinnamon Oatmeal Cookies

This much-loved classic dessert is made with raisins, cinnamon, oatmeal, flour, egg, and brown sugar.

Ingredients:

  • Old fashioned roll oats 1 cup
  • White whole wheat flour 1 cup
  • Ground cinnamon 1 teaspoon
  • Baking powder 1 teaspoon
  • Salt ½ teaspoon
  • Raisins ½ cup
  • Light brown sugar 2/3 cup packed
  • Egg 1 large
  • Unsalted butter 6 tablespoons, melted
  • Alcohol-free vanilla extract 1 ½ teaspoons

Directions:

  • Preheat your oven to 350 degrees F.
  • Lightly grease a baking sheet with cooking spray, set aside.
  • In a medium bowl, stir together flour, cinnamon, baking powder, and salt.
  • In a large bowl, whisk together sugar, egg, butter, and vanilla extract.
  • Add oats, flour mixture, and raisins in egg and butter mixture and mix with a wooden spoon until well combined.
  • Drop level tablespoons of this batter onto the greased baking sheet, make sure to leave the space between two cookies as they will increase in size.
  • Bake for 14 minutes or until golden brown.
  • Remove from the oven and let it cool for 5 minutes on the baking sheet then transfer to a wire rack to cool completely.
