This delicious American Cajun chicken gumbo is made with chicken breasts, turkey ham, chicken stock, vegetables, and Cajun spice mix.

Ingredients:
- Skinless chicken breasts 5, cut into chunky pieces
- Thickly sliced turkey ham 300g, trimmed off any fat, and diced
- Chicken stock 600ml
- Onion 1 chopped
- Celery 2 sticks, sliced
- Green peppers 2 deseeded and cut into chunks
- Parsley 2 tablespoons, roughly chopped
- Spring onion 3 sliced
- Cajun spice mix 4 teaspoons
- Plain flour 5 tablespoons
- Bay leaves 3
- Olive oil 4 tablespoons
Directions:
- In a large frying pan, heat 1 tablespoon of olive oil over medium heat.
- Add in chicken pieces and fry for 5 minutes or until browned.
- Transfer cooked chicken onto a plate.
- Add 1 more tablespoon of oil into the frying pan and add onion in it.
- Cook for 5 minutes or until almost softened.
- Add in celery and fry for 2 more minutes.
- Transfer the cooked onion and celery to the chicken plate along with chicken pieces.
- Add the remaining 2 tablespoons of oil to the frying pan and add bay leaves and flour in it.
- Cook for 2 to 3minutes or until golden brown, stirring constantly.
- Stir in the Cajun spice mix and cook for 2 more minutes.
- While whisking with a hand mixer pour in stock and mix until smooth and saucy.
- Return the chicken, onion, and celery to the stock mixture along with the peppers.
- Cover, and simmer for 15 minutes.
- Add in turkey ham, cover, and simmer for additional 10 minutes, stirring occasionally.
- Taste and adjust the seasonings, garnish with parsley and spring onion and serve.
