Valentine Linzer Cookies

Ingredients:

1/2 cup of butter
1/3 cup of sugar ( 2.7 oz)
Pinch of salt
1 tsp vanilla extract
1 tsp baking powder
One egg
1/3 cup of almond flour ( 1.5 oz)
1 1/2 cup of all purpose flour (6.7 oz)
1/2 cup of strawberry jam

Directions:

1. Beat the butter at room temperature with sugar for 2-3 minutes, add the vanilla extract, beat and at the end add the egg. Continue to whisk until completely smooth.

2. All dry ingredients are mixed with a whisk in one large bowl or in the bowl of the mixer. Add the previously beaten butter and knead everything well into a homogeneous lump of dough. Divide the dough into 2 equal parts, each wrap with cling film and put in the refrigerator for 2 hours.

3. Roll out the cooled dough with a thickness of 3 mm, sprinkling with flour. Using cookie cutters, cut out an even number of cookies (used for the bottom and top).

4. Spread cookies evenly on parchment paper and bake in the oven for 8-10 minutes at a temperature of 180°C (350 °F). Cookies should not darken at the edges.

5. On the baked bottom, put the jam, and sprinkle the top with powdered sugar and only then connect the two halves. Cookies are now ready to be enjoyed!
