Ingredients:
- 4 egg white
- 3 egg yolks
- 1 tbsp of chopped mint
- ¼ cup of mushroom, chopped
- ¼ cup of kale, chopped
- 1 tbsp of freshly ground black pepper
- 1 tbsp of avocado oil
- Salt to taste
Directions:
- In a bowl, add all the ingredients, except avocado oil.
- Beat the mixture using an electric beater.
- In a hot pan, add avocado oil and egg mixture.
- Cook at low heat with lid on for at least 5 min.
- Turn sides of the frittata, so that the both sides cook evenly.
- Serve hot.
