This healthy and delicious salmon is very easy to cook and served with refreshing lemon cucumber salad.

Ingredients:
- 4 (6 ounces each) pieces salmon fillets
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 cedar grilling plank, soaked in water for at least 1 hour
For lemon cucumber salad:
- 2 tablespoons fresh lemon juice
- 1 tablespoon extra virgin olive oil
- 1 seedless cucumber, sliced into thin half-moons
- 1 jalapeno, seeded and sliced
- ½ teaspoon salt
Directions:
- Heat your grill to medium.
- Season the salmon fillets with salt and pepper and arrange on the plank.
- Place the plank on preheated grill and cook covered for 12 to 15 minutes or until the salmon fillets are opaque and flakes easily with a fork.
- Meanwhile, combine all the ingredients of salad in a bowl and mix well.
- Serve the salmon with lemon cucumber salad.
