Plank Grilled Salmon with Lemon Cucumber Salad

This healthy and delicious salmon is very easy to cook and served with refreshing lemon cucumber salad.

Serves: 4
Preparation time: 10 minutes
Cooking time: 15 minutes

Ingredients:

  • 4 (6 ounces each) pieces salmon fillets
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 cedar grilling plank, soaked in water for at least 1 hour

For lemon cucumber salad:

  • 2 tablespoons fresh lemon juice
  • 1 tablespoon extra virgin olive oil
  • 1 seedless cucumber, sliced into thin half-moons
  • 1 jalapeno, seeded and sliced
  • ½ teaspoon salt

Directions:

  • Heat your grill to medium.
  • Season the salmon fillets with salt and pepper and arrange on the plank.
  • Place the plank on preheated grill and cook covered for 12 to 15 minutes or until the salmon fillets are opaque and flakes easily with a fork.
  • Meanwhile, combine all the ingredients of salad in a bowl and mix well.
  • Serve the salmon with lemon cucumber salad.
