Ingredients:
- 14 cups cubed watermelon, seedless
- 1 cup green onions, chopped
- 1 medium red onion, halved and thinly sliced
- 1 tablespoon sweet red pepper, finely chopped
- ¾ cup orange juice
- 3 tablespoons apple cider vinegar
- 3 tablespoons honey
- ¾ cup vegetable oil
- ½ teaspoon salt
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon ground mustard
- ¼ teaspoon pepper
Directions:
- Combine watermelon, green onion, and red onion in a large bowl.
- Mix together the finely chopped red pepper, orange juice, apple cider vinegar, honey, salt, garlic powder, onion powder, ground mustard, and pepper in a small bowl.
- Slowly whisk in the vegetable oil.
- Pour orange juice mixture over watermelon mixture.
- Toss gently to coat, cover, and refrigerate for at least 2 hours, stirring occasionally.
- Serve with a slotted spoon.
