Best Fluffy Pancakes

This recipe guarantees you will always end with a big tower of warm, delightful and fluffy homemade pancakes.

These pancakes are perfect to prepare for Sunday brunch with a huge selection of toppings for people to choose from. Some great options are: fresh fruits, maple syrup, mozzarella cheese, ham, bacon, chocolate syrup, chocolate spread, etc.

Yields:
10 medium size pancakes / 30 mini pancakes

 

Ingredients:

  • 1 ½ cups of all-purpose flour
  • ½ cup of sugar
  • 2 eggs
  • 1 cup of buttermilk*
  • 2 tbsp of oil
  • 2 tsp of baking powder
  • 1 tsp of vanilla extract
  • A pinch of salt

 

Method:

  1. In a large bowl, whisk your eggs really well until they reach a pale color.
  2. Incorporate the sugar and salt. Keep whisking to combine with the eggs.
  3. Add the buttermilk, vanilla extract and oil to the batter.
  4. Finally, sift in the all-purpose flour and baking powder. Give it a last good whisk to combine all the ingredients. It is important to sift the dry ingredients to avoid big lumps in the mixture.
  5. In a large nonstick skillet, over medium heat, add about ¼ cup of the batter.
  6. Wait until you see little bubbles on top to flip the pancake.
  7. You want your pancakes to be golden on each side.
  8. Serve with any savory or sweet topping that you want!

 

Homemade buttermilk:

Buttermilk can be difficult to find in some countries, but the good thing is that is extremely easy to make at home and you only need two ingredients for that.

Ingredients:

  • 1 cup of milk
  • 2 tbsp of vinegar or lemon juice

Method:

  1. Combine the milk and vinegar or lemon juice.
  2. Stir and let it sit for 10 minutes before using it.
