Baked Fish with Roasted Vegetables

Ingredients:
For Vegetables :
  • 2 large potatoes cut into thin wedges
  • 3 tomatoes cut into wedges
  • 2 small onions cut into quarters
  • 7-8 cloves of garlic
  • 2 tbsp olive oil
  • Salt and white pepper to taste
  • 1 tbsp Italian herbs or any mixed herbs
  • 1/2 tbsp cumin seeds
For Fish :
  • 5-6 boneless fish fillets. (Any white fish) Prefer white salmon
  • 4-5 cloves of garlic crushed with salt and white pepper to taste
  • 1 tsp Italian herbs
  • 2 lemons juice

 

Method

  1. Mix the garlic, italian herbs and lemon juice. Pour marinade over the fish fillets and keep aside for an hour.
  2. Preheat oven to 375°F, Toss all the ingredients mentioned for vegetables together and spread in a baking tray.
  3. Bake for about 35-40 mins till the potatoes are tender.
  4. You might need to toss around all the vegetables every 10 mins.
  1. place the marinade fish fillets carefully over the bed of vegetables so that it doesn’t stick to the bottom , cook for a further 15 mins and it’s ready

Time to eat !

 

Serve with rice or Loaf.
