Creamy Pasta with Tomatoes

Get ready to learn how to cook a five stars restaurant dish at home. Even better, you will be using only simple ingredients!

Ingredients:

  • 16 oz of pasta, your favorite kind
  • 1 cup of heavy cream
  • 2 tbsp of butter
  • 1 clove of garlic, minced
  • 2 tomatoes, sliced
  • 3 tbsp of olive oil
  • A pinch of salt
  • Pepper to taste

 

Instructions:

  1. Preheat the oven to 350 degrees F.
  2. In a large baking pan, place the sliced tomatoes and drizzle them with the olive oil.
  3. Sprinkle some salt and pepper and bake the tomatoes for about 20 minutes, until roasted. Check them after 15 minutes to make sure they don’t get burn.
  4. While the tomatoes are in the oven, bring to boil a pot of water to cook the pasta. I like using any sort of short pasta but feel free to use any shape you like the most!
  5. When ready, drain the pasta and set aside.
  6. In a large skillet, over medium heat, add the butter and minced garlic. Stir and let it cook for about 1-2 minutes before adding the heavy cream.
  7. Pour the heavy cream into the skillet and stir continuously to incorporate all the ingredients. Sprinkle salt and pepper to taste. Here is when you want to add any extra seasoning that you would like.
  8. Cook the cream until it feels thicker. Turn off the kitchen but you will use the remaining heat of the pot to mix the pasta with the cream smoothly.
  9. Fold the pasta into the cream. Make sure to cover it completely.
  10. Add the roasted tomatoes and top and gently stir again. I usually cut each tomato slice into four and then mix it; this way it is easier to have a bit of tomato with each bite.
  11. Serve and enjoy! If you have any roasted tomato leftovers, store them in a glass jar and they will keep great for up to 2 weeks!
