Thyme and Rosemary Chicken Breast

This thyme and rosemary chicken breast cubes recipe is going to amaze all your guests and even yourself! It is not necessary to use a lot of ingredients to make something different than your typical grilled chicken breast.

Because the recipe combines chicken and veggies it is perfect to be served in an easy one bowl style!

Ingredients:

  • 2 chicken breasts, cubed
  • 1 large potato, cubed
  • 1 large carrot, cubed
  • 1 tbsp of fresh rosemary, chopped
  • 1 tbsp of thyme, chopped
  • 2 tbsp of lemon juice
  • 1 tsp of olive oil
  • A pinch of salt
  • Pepper to taste

 

Instructions:

  1. In a large bowl, combine the potato and carrot cubes. If you want to add some extra veggies, combine them all.
  2. Add the olive oil into the bowl and sprinkle some salt and pepper. Stir and set aside, this way the veggies are going to be well seasoned before cooking them.
  3. In a non-stick skillet, over low heat, add the chicken breast pieces, chopped thyme and chopped rosemary. Combine really well, make sure all the chicken pieces are covered with rosemary and thyme. Remember to use a wooden spoon to avoid any damage that can be caused to the skillet.
  4. Immediately, pour the lemon juicy followed by the salt and pepper. Stir again.
  5. Add the potato and carrot cubes into the skillet and cook until the chicken is golden and veggies are soft.
  6. Stir the chicken and veggies about every two minutes. Make sure all the sides of the chicken cubes are well cooked.
  7. Adding a about 2 tbsp of butter when almost ready gives it an extra flavor punch but it is totally optional, some people prefer to make it without it.
  8. Serve with your favorite side dishes!
