Learn how to make raviolis at home using just a few simple ingredients. Use your imagination to create as many filling variations as you wish. Some great options are: your favorite cheese, bacon and cream cheese, shredded chicken, roasted tomatoes, ricotta and spinach…
Ingredients:
- 2 cups of all purpose flour
- 1 egg
- 1 yolk
- 1 tbsp of olive oil
- 3/4 cup of Parmesan cheese
- 2 tbsp of butter, melted
Instructions:
- Before starting, sift your all purpose flour to avoid lumps in the dough.
- In a large flat surface, place the all purpose flour creating a mountain.
- With your fingers, make a large hole in the center of the flour mountain.
- Add the egg, egg yolk and olive oil inside the flour volcano that you just made.
- Using a fork or a knife, break the yolks.
- Now, using your hands, start to combine the flour with the other ingredients.
- Add 1 tbsp of water at a time to create a smooth dough.
- Knead the dough for at least 10 minutes. Press it hard agains the table using your hands. If you have an electric mixer with a dough hook feel free to use it.
- Let the dough rest for 20 minutes before to continue with the filling process.
- Sprinkle some flour over a flat surface.
- Cut your dough in half. Each half will be a side of your raviolis.
- Roll each half ot the dough into really thin rectangles of the same size.
- In a medium bowl, combine the Parmesan cheese with the melted butter, stir to form a paste.
- Add 1 tsp of Parmesan cheese paste into the dough and leave about 4 mm in between each tsp.
- When finished, cover the first dough rectangle with the second one.
- Press between each tsp of filling to close the edges of each ravioli.
- Using a pastry cutter or a serrated knife, cut each ravioli square.
- Make sure, one by one, that all the edges are well closed.
- In a large pot, over medium heat, add water and bring to boil.
- When boiling, incorporate the raviolis and cook for 10 minutes or until tender.
- Serve with your favorite sauce!
