This recipe is going to combine some of my all time favorites: brownies, blondies and chocolate chips cookies.
Ingredients:
- 1 1/2 cup of all purpose flour
- 1 cup of muscovado
- 1/2 cup of sugar
- 1/2 cup of butter, room temperature
- 2 eggs
- 1 cup of chocolate chips
- 1 tsp of baking powder
- 1 tsp of vanilla extract
- A pinch of salt
Instructions:
- In a large bowl, cream together the muscovado, sugar, salt and butter. Complete this step using either an electric mixer or a hand whisk.
- Incorporate one egg into the bowl, mix until combine and then add the second egg, mix again.
- Add the vanilla into the mixture. If you are not a vanilla lover, another great ingredient to use instead is black coffee. This cookies are really intense and the coffee will help to make them extra tasty.
- Sift into the bowl the all purpose flour and baking powder. Stir to create your cookie dough. It is important to sift the dry ingredients to avoid lumps in the dough.
- Incorporate the chocolate chips and give it a last good stir. I recommend using milk chocolate chips but dark or white ones are fanstastic too.
- Cover your baking pan with parchment paper, a rectangular 28 x 18 cm pan is recommended, and spread the dough as if you were making a brownie.
- Let the dough chill in the refrigerator for at least an hour before baking.
- Preheat the oven to 350 degrees F.
- Cook the cookie bars for 25 minutes. Check them after 18 minutes or so. You don’t want to overbake these.
When ready, let the cool down just a bit and preferably serve warm with a cup of tea or coffee. Enjoy!
