These cookies are the perfect ones to dip in your favorite hot beverages.
Ingredients:
- 1/2 cup of butter, room temperature
- 1 cup of sugar
- 2 1/2 cups of all purpose flour
- 2 eggs
- 1 cup of mini chocolate chips
- 1 tsp of baking powder
- 1 tsp of vanilla extract
- A pinch of salt
Instructions:
- Preheat the oven to 350 degrees F.
- In a large bowl, cream together the room temperature butter, salt and granulated sugar. If you want to use brown sugar add 1/4 cup more. For this step you can use either a whisk and do it by hand or an electric mixer.
- Add the eggs and vanilla extract. Mix again to combine the ingredients.
- Sift into the mixture the all purpose flour and baking powder. It is important to sift these to avoid having large lumps in the dough later.
- Incorporate the mini chocolate chips and fold them into the cookie dough. Use your favorite ones, I like to use milk chocolate but sometimes a good mix of milk and dark chocolate works fantastic too!
- In a clean flat surface, shape the dough into a log with a flat top. Don’t worry too much about the size. Also, if you want to make small biscotti cookies, divide the dough and make two logs.
- Transfer the log to a baking sheet with parchment paper.
- Bake for 30 minutes and then let it cool down for 15 – 20 minutes. Don’t turn off the oven yet!
- When cooler, slice the log into the biscotti cookies and place them again in the baking sheet.
- Bake for 10 minutes, take them off, flip them and bake for another 10 minutes.
- When ready on both sides, take them out of the oven and let them cool down before serving!
