This recipe will show you how to make chicken leg quarters that are extra juicy in the inside and with a delicious crispy skin on the outside.
If you want to create kind of a one pan recipe, just add some veggies in the tray while baking the chicken. Some perfect to pair with this recipe are: red potatoes, carrots, asparagus and bell peppers.
Ingredients:
- 4 leg quarters
- 1 cup of barbecue sauce
- 3 tbsp of mustard
- 1 tbsp of garlic powder
- 1 tsp of honey
- Pepper to taste
- Salt to taste
Instructions:
- In a large bowl, combine the barbecue sauce and mustard. Use your favorite kind of condiments but if you choose a sweet sauce like honey mustard, avoid adding extra honey later because the chicken would end being too sweet.
- Add the garlic powder, honey, pepper and salt. Stir to combine. If you want to change the garlic powder for minced garlic, use about 4 cloves, both options work great.
- Dip each leg quarter into the mixture and place them in a baking tray. Pour all of the extra sauce mixture all over the chicken and let the tray in the refrigerator for about an hour or two.
- Preheat the oven to 180 degrees C.
- Bake the chicken for 40 minutes. Don’t forget to keep an eye on them after 30 minutes because every oven is different so yours might need less time than others.
- After baked the chicken is perfect to serve, but if you want it extra crispy then follow the next step.
- In a large skillet, over medium heat, add about 2 tbsp of oil.
- When hot, add each chicken leg quarter until golden on each side.
- Place them in a paper towel to absorb the oil excess and then serve right away!
