Easy Fried Rice

Learn how to make an easy homemade fried rice that can be customized as you wish! Cook it with your favorite protein: sausages, meat, chicken, shrimps, pork…

This recipe is perfect to reuse some rice leftovers!

Ingredients:

  • 2 cups of rice
  • 4 cups of water
  • 4 large sausages. sliced
  • 1 cup of chicken, cubed
  • 2 eggs, beaten
  • 1/2 cup of red bell pepper, diced
  • 1/2 scallion, chopped
  • 1/2 cup of onion, diced
  • 1 tbsp of soy sauce
  • 1/2 tsp of turmeric
  • Salt to taste
  • Oil to fry

Instructions: 

  1. In a large pot, cook the rice as usual, using 2 cups of water for each cup of rice, but you’ll also be adding the 1/2 tsp of turmeric and soy sauce. When ready, set aside to use later. Personally, I like to make the rice one day before cooking the fried rice, but fresh one works perfect too.
  2. Cook the chicken, sausages and eggs in a large skillet with about 2 tbsp of oil. When all ready, set aside in a bowl. Remember to condiment the chicken as you prefer. I like to use a bit of salt, black pepper and some red pepper as well.
  3. Again, using the same skillet, add a bit more of oil and when hot enough incorporate all the chopped veggies. If you want bigger chunks that is great too. Stir with a wooden spoon to prevent scratching the skillet.
  4. When the vegetables are fragrant, add in the rice and all the protein. Stir well to combine all the ingredients; don’t forget to algo cut the eggs in chunks. The rice will turn golden with a crispy texture, time to serve!

Add some soy sauce on top if want some extra flavor.
