Some people think vegan food is boring but this sauce will convince them otherwise. This sauce is also perfect for those who want to start adding more vegetables to their diets but don’t want to eat just a plain salad everyday.
Ingredients:
- 150 g of mushrooms
- 3 carrots, medium
- 1 onion, medium
- 2 cups of tomato puree
- 4 cups of water
- 2 tbsp of sugar
- 1 tsp of oregano
- A pinch of black pepper
- A pinch of salt
Instructions:
- Using a food processor or blender, chop the mushrooms until they look like ground beef. If you prefer bigger chunks that works perfectly too!
- Peel the carrots and shred them. I recommend to use the large part of a cheese grater.
- With the onion, chop it in small pieces. Use your favorite kind of onion.
- In a large non stick pot over low heat, combine the three vegetables and stir using a wooden spoon until fragrant.
- Add the sugar, oregano, black pepper and salt. Feel free to add any other spice that you like to use.
- After the veggies are on the heat for about 10 minutes, add the two cups of tomato puree and four of water. Let cook until thick, the water will help to cook the tomato.
- Stir every 10 – 15 minutes. And try it again after about 30 minutes to see if it needs more salt or pepper.
- The more you can cook the tomato the better the sauce will be! Cook it for at least 2 hours. If you start to see that there is not enough water anymore because of the evaporation, add an extra cup.
- Serve with your favorite kind of pasta!
