Ingredients:
- 1 cup of pumpkin, cubes
- 5lbs of chicken pieces
- 2 cups of chicken stock water
- ½ cup of white onions
- 1 tbsp of olive oil
- 1 tbsp of lime juice
- 1 tbsp of freshly ground pepper
- Salt to taste
Instructions:
- In a soup vessel, add pumpkin, chicken, white onions and salt.
- Sauté for 5 min.
- Add 2 cups of chicken stock water and put the lid on.
- Boil for 15 min.
- Turn off the heat and allow the mixture to cool.
- Blend the pumpkin mixture until it reaches smooth consistency.
- Add freshly ground pepper and salt if needed.
- Serve hot.
