This easy to make, quick, and healthy dish is made with fresh summer vegetables and bulgur served with cheese.

Ingredients:
- 2 cups boiling water
- 1 cup bulgur
- 1 can (15 ounces) black beans, rinsed and drained
- 1 cup finely chopped red onion
- 3 medium tomatoes, chopped
- 2 green onions, thinly sliced
- 2 jalapeno peppers, seeded and chopped
- 2 garlic cloves, minced
- ½ cup green peppers, chopped
- ½ cup sweet red pepper, chopped
- ½ cup fresh cilantro leaves, chopped
- ¼ cup lime juice
- 3 tablespoons canola oil
- 1 cup crumbled feta cheese or queso fresco cheese
- ¼ teaspoon coarsely ground black pepper
- ¼ teaspoon salt
Directions:
- Combine boiling water and bulgur in a large bowl stir well, cover, and let stand for 30 minutes or until bulgur is tender and most of the liquid is absorbed.
- Drain well, pressing excess liquid and allow it to cool completely.
- Combine bulgur and all the remaining ingredients except cheese in a large bowl, mix well.
- Cover and refrigerate for at least 30 minutes.
- Serve with cheese.
