American Tabbouleh

This easy to make, quick, and healthy dish is made with fresh summer vegetables and bulgur served with cheese.

Preparation time: 40 minutes

Ingredients:

  • 2 cups boiling water
  • 1 cup bulgur
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup finely chopped red onion
  • 3 medium tomatoes, chopped
  • 2 green onions, thinly sliced
  • 2 jalapeno peppers, seeded and chopped
  • 2 garlic cloves, minced
  • ½ cup green peppers, chopped
  • ½ cup sweet red pepper, chopped
  • ½ cup fresh cilantro leaves, chopped
  • ¼ cup lime juice
  • 3 tablespoons canola oil
  • 1 cup crumbled feta cheese or queso fresco cheese
  • ¼ teaspoon coarsely ground black pepper
  • ¼ teaspoon salt

Directions:

  • Combine boiling water and bulgur in a large bowl stir well, cover, and let stand for 30 minutes or until bulgur is tender and most of the liquid is absorbed.
  • Drain well, pressing excess liquid and allow it to cool completely.
  • Combine bulgur and all the remaining ingredients except cheese in a large bowl, mix well.
  • Cover and refrigerate for at least 30 minutes.
  • Serve with cheese.
