Brownie and Whipped Cream Cake

This recipe will help you to transform a simple dessert into a gourmet version of itself. If you like chocolate, you will completely fall in love with this treat!

Ingredients:

For the brownies:

  • 1 cup of all-purpose flour
  • ¾ cup of sugar
  • ½ cup of butter, melted
  • 80 g of dark chocolate, chopped
  • 3 eggs
  • 1 tsp of vanilla extract
  • A pinch of salt

To assemble:

  • 1 cup of heavy whipping cream
  • 40 g of dark chocolate, melted
  • 1 tbsp of cocoa powder

Method:

For the brownies:

  1. Preheat the oven to 350º F.
  2. Melt the dark chocolate using the double boiler method. You can also use the microwave; heat the chocolate for 10 seconds, stir, heat for 10 seconds and stir again. Repeat the process until completely melted. Set aside to cool down.
  3. In a large bowl, add the melted butter, sugar and salt. Whisk really well.
  4. Add the eggs, one by one, keep whisking to incorporate all the ingredients until light and fluffy.
  5. Incorporate the melted chocolate and vanilla extract. Make sure the chocolate is not hot. Stir the mixture.
  6. Finally, sift in the all-purpose flour and fold it into the batter. Don’t overmix.
  7. Line a baking pan with some parchment paper. Preferably a 9 x 13-inch pan.
  8. Pour your batter into the pan and bake for 18 minutes.
  9. When the brownie cools down, crumble it all.

To assemble:

  1. In a cold bowl, add your cold heavy whipping cream and whip it on high speed until stiff peaks form.
  2. Take an individual springform pan and add a layer of brownie crumbs.
  3. Over that one, add a layer of whipped cream.
  4. Repeat the same until the top of the pan. You can make around 4 individual cakes.
  5. Refrigerate for an hour to set.
  6. Drizzle some dark chocolate on top.
  7. Finish it with a sprinkle of cocoa powder.
