Cajun Chicken Burgers with Avocado and Baby Spinach

Cajun seasoned chicken breasts are topped with avocado, baby spinach, mayonnaise and cheese to make these delicious burgers.

Cooking time: 15 minutes

Ingredients:

For the Cajun seasonings:

  • 1 tablespoon ground coriander
  • 1 tablespoon ground cumin
  • 1 tablespoon paprika
  • Salt and pepper to taste

For the burgers:

  • 2 tablespoons olive oil
  • 4 boneless, skinless chicken breasts
  • 2 avocados, seeded and sliced
  • 4 small handfuls baby spinach leaves
  • 4 thin slices of cheese
  • 4 rashers smoked turkey bacon
  • Mayonnaise to serve
  • Burger buns 4

Directions:

  • Combine all ingredients of Cajun seasoning in a bowl, mix well and set aside.
  • Heat grill to high.
  • Slightly flatten out the chicken breasts on a cutting board.
  • Transfer chicken to a large bowl and add in Cajun seasoning and drizzle1 tablespoon of olive oil over it and toss until completely coated.
  • In a large frying pan, heat the remaining 1 tablespoon of olive oil and sizzle the chicken pieces for 5 minutes per side or until firm.
  • Push the cooked chicken pieces one side of the frying pan and fry the bacon in the same pan for a few minutes or until cooked.
  • Toast the cut sides of each bun and cover the top of the buns with cheese then grill until cheese is melted.
  • Assemble the burgers by spreading the mayonnaise over buns, top with a handful of spinach, then a rasher of turkey bacon.
  • To keep the avocado slices in place, slice the chicken then alternate between the slice of chicken and avocado.
  • Top with the buns and lightly press down then serve.
