This is a healthy and tasty recipe that will help you to cook something different and fun just using simple ingredients that you might already have at home.
Even though the recipe calls for chicken thighs, you can also make it with chicken breast pieces. Also, doing it with chicken and beef is also an amazing idea!
Ingredients:
- 1 lb of chicken thighs, chopped
- 2 tomatoes
- 2 green bell pepper
- 2 potatoes
- 1 tbsp of garlic poder
- 1 tbsp of paprika
- 2 tbsp of lemon juice
- 2 tbsp of olive oil
- Salt to taste
- Black pepper to taste
- Skewers
Instructions:
- In a large bowl add the chicken thigh pieces with the garlic powder, paprika, lemon juice, salt and black pepper. Stir to combine all the condiments. Place the chicken in a plastic bag, close it and keep it in the refrigerator for 20-30 minutes to let it absorb all the flavor.
- Preheat the oven to 350 degrees F.
- Chop all your veggies. I recommend to chop them in large pieces about the same size of the chicken ones.
- Take back the chicken into the large bowl and combine it with all the chopped veggies. It is important to follow this step so the vegetables also receive some of the condiments before cooking them.
- Now it is time to assemble the skewers. Take each one and layer one chicken piece, one of each vegetable and another chicken one. Keep going until you reach the top. Remember to leave some space in the bottom to grab them.
- Pour the olive oil all over a tray and place the chicken kebabs.
- Bake for 15 minutes, take out the tray from the oven, turn them over and bake for the other side another 15 minutes or until golden.
- Serve with some dipping sauces!
