Ingredients:
3 egg whites
½ cup of chicken, cut into small pieces
1 tbsp of ginger paste
½ tbsp of garlic paste
¼ cup of arugula leaves
2 tbsp of chopped parsley
½ tbsp of freshly ground black pepper
½ tbsp of oregano
¼ tbsp of olive oil
Salt to taste
Directions:
- In a bowl, add egg whites, chopped parsley, dried mint and salt.
- Beat the mixture using an electric beater.
- Add olive oil to a pan and this egg mixture.
- Make a thin omelette.
- In another pan, add chicken pieces, ginger paste, garlic paste, ground black pepper and salt.
- Sauté the mixture for 6-9 min.
- After that add arugula leaves and mix with the chicken mixture.
- Arrange a small portion of chicken and arugula mixture on one side of omelette and roll it carefully.
- Serve hot.
