Choco Chips Biscotti

These cookies are the perfect ones to dip in your favorite hot beverages.

Ingredients:

  • 1/2 cup of butter, room temperature
  • 1 cup of sugar
  • 2 1/2 cups of all purpose flour
  • 2 eggs
  • 1 cup of mini chocolate chips
  • 1 tsp of baking powder
  • 1 tsp of vanilla extract
  • A pinch of salt

 

Instructions:

  1. Preheat the oven to 350 degrees F.
  2. In a large bowl, cream together the room temperature butter, salt and granulated sugar. If you want to use brown sugar add 1/4 cup more. For this step you can use either a whisk and do it by hand or an electric mixer.
  3. Add the eggs and vanilla extract. Mix again to combine the ingredients.
  4. Sift into the mixture the all purpose flour and baking powder. It is important to sift these to avoid having large lumps in the dough later.
  5. Incorporate the mini chocolate chips and fold them into the cookie dough. Use your favorite ones, I like to use milk chocolate but sometimes a good mix of milk and dark chocolate works fantastic too!
  6. In a clean flat surface, shape the dough into a log with a flat top. Don’t worry too much about the size. Also, if you want to make small biscotti cookies, divide the dough and make two logs.
  7. Transfer the log to a baking sheet with parchment paper.
  8. Bake for 30 minutes and then let it cool down for 15 – 20 minutes. Don’t turn off the oven yet!
  9. When cooler, slice the log into the biscotti cookies and place them again in the baking sheet.
  10. Bake for 10 minutes, take them off, flip them and bake for another 10 minutes.
  11. When ready on both sides, take them out of the oven and let them cool down before serving!
