Chocolate Chip Pancakes

These soft and fluffy pancakes are perfect for breakfast or brunch. Take time to savor the chocolate as it melts into your mouth at every bite. Once you try it, you will be craving for more.

Ingredients:

2 cups flour
1 tbsp sugar
2 ½ tsp baking powder
½ tsp salt
2 tbsp vegetable oil
1 egg
1 ½ cups milk
½ cup chocolate chips

Method:

  1. Add flour, sugar, salt and baking powder. Mix them together.
  2. Beat the egg and then add to the mixture. Add vegetable oil and milk. Mix until well combined.
  3. Add chocolate chips. Mix until the chocolate chips are incorporated into the mixture. Add ¼ cup flour if the mixture is too runny or add ¼ cup milk if the mixture is too thick.
  4. Grease the cast iron or frying pan with oil. Heat to medium high for 2 minutes. To ensure the pan is hot enough, sprinkle some water on it. If the pan dries it up quickly, it is ready to be used.
  5. Using the ¼ cup, scoop the mixture out and pour onto the pan. The bubbles should appear on the top of the pancakes and turn into holes. That means it is ready to be flipped over.
  6. Let the other side cook for another minute. Check to see if the bottom is no longer gooey before removing it from the pan.
