Learn how to make this delicious treat that can be made with many fillings and toppings!
Ingredients:
For the pastry:
- 1 cup of all purpose flour
- 4 eggs
- 1 cup of water
- 1/2 cup of butter
- A pinch of salt
To fill and decorate:
- 3 cups of chocolate mousse
- 1 cup of melted chocolate, white or milk
- 1/2 cup of almonds, toasted
Instructions:
- In a saucepan, over low heat, add the water and butter. Wait until the butter melts completely.
- Add into the pan the all purpose flour, don’t forget to sift it first, and the pinch of salt. Using a wooden spoon start to stir the ingredients until you get kind of a dough. It will have a sticky texture.
- Remove the saucepan from the heat and keep stirring with the wooden spoon to cool down a bit the mixture.
- Add one egg at a time and stir well to combine. Make sure the dough is not too hot or it might cook the egg.
- After adding all the eggs, give it a last good stir to the dough.
- Preheat the oven to 180 degrees C.
- Place your dough into a pastry bag with a large round tip.
- In a previously lined baking sheet, pipe the dough to create 4 inch eclairs, of course you can make them as long or short as you want. Leave some space in between for them to puff.
- Bake for 20 minutes or until golden.
- When ready, set aside to cool down before filling them.
- Take a new pastry pag and fill it with the chocolate mousse. If you don’t want them to be filled with chocolate, pastry cream or jam are awesome too.
- Create two incisions on each side of the eclairs.
- Fill each eclair with chocolate mousse. I like to make two incisions to make sure I can fill them completely.
Before serving your dessert, add some white chocolate and toaste almonds on top. Combine these eclairs with any toppings that you like!
