Chorizo and Potato Croquettes

This recipe is perfect to use as an entree or finger food for any party! Use your imagination and create as many combinations as you want, potatoes are incredible with so many other ingredients like: chicken, bacon, ham, spinach, etc…

Ingredients:

  • 1 kg of potatoes
  • 500 g of ground chorizo
  • 2 eggs
  • 1/4 cup of all purpose flour
  • 1/3 cup of breadcrumbs
  • A pinch of paprika
  • Salt to taste
  • Black pepper to taste
  • Oil to fry

Instructions:

  1. Wash really well the potatoes and peel them carefully.
  2. In a large pot, over medium heat, add a pinch of salt and bring the potatoes to boil until tender. When ready set aside to let them cool down.
  3. In a large bowl, smash the potatoes and add one egg, previously beaten, paprika, salt to taste and black pepper to taste. Feel free to add any other seasoning that you like to use or even some of your favorite cheese, like shredded Parmessan.
  4. Incorporate the ground chorizo into the bowl of potatoes and mix well to combine all the ingredients.
  5. Take three containers and prepare them with the following: the first one with a beaten egg, second with the all purpose flour and third with the breadcrumbs.
  6. Divide the potato dough into 12-15 croquettes. You can make them in any shape you want.
  7. Place the croquettes in the refrigerator for 20 minutes before continuing.
  8. Cover each croquette with all purpose flour, then beaten egg and finally breadcrumbs. Make sure all of them are well covered.
  9. Add the oil in a large frying pan and start to cook the croquettes until deep in color.
  10. When ready place them on an absorbent paper to eliminate oil excess.

Serve while still warm!
