Crab Cakes

You can serve this amazing and quick dish as a starter in your New Year’s Eve meal or as a snack on a cold and breezy day.

Preparation time: 15 minutes
Cooking time: 10 minutes

Ingredients:

  • Cooked crab meat 750g
  • Egg 1 large, beaten
  • Mashed potato 300g
  • Spring onions 3, trimmed and finely chopped
  • Fresh flat-leaf parsley ½ bunch, pick and finely chopped
  • Cayenne pepper 1 teaspoon
  • Ground white pepper 1 teaspoon
  • Sea salt 1 pinch
  • Plain flour for dusting
  • Oil for frying
  • Watercress and tartare sauce for serving

Directions:

  • Combine crabmeat, egg, mashed potatoes, spring onion, parsley, cayenne pepper, white pepper, and salt in a large bowl and mix well.
  • Cover and refrigerate for 30 minutes.
  • After 30 minutes, remove from refrigerator and shape into 6cm cakes.
  • Dust with flour and shallow fry in a large frying pan over medium heat for 5 minutes per side or until golden brown.
  • Serve with pinches of watercress and a dollop of tartare sauce.
