Ingredients

For the cake:

2 cups white flour
¾ cups white sugar
1/3 cup butter, softened
1 tsp. vanilla extract
2 ¼ tsp. baking powder
1 ¼ tsp. grated lime
1 large egg
½ tsp. salt
1 tsp. red food coloring

For the frosting:

2 cups powdered sugar
½ cup butter, softened
2 tsp. vanilla extract
3 tbsp. milk
1 tsp. red food coloring

Directions:

  1. Grease the 8-inch baking pan with butter or vegetable oil. Set aside.
  2. In a mixer, beat the butter on medium power for 1 minute. Add sugar; cream them together until the mixture is light and fluffy.
  3. In a medium sized bowl, mix flour, baking powder and salt together until well incorporated. Set aside.
  4. Beat the egg, grated lime and vanilla extract together in a small bowl. Add to the butter mixture and mix together.
  5. Gradually add the flour mixture to the butter mixture. Switch to low power and mix until well incorporated. The mixture should have smooth consistency after mixing.
  6. Pour the mixture into an 8-inch baking pan.
  7. Add the red food coloring into the mixture; use a fork to swirl it around to make the marble effect.
  8. Bake at 350 degrees F for about 40 minutes until it is golden brown. Let cool and transfer from the pan to the cooling rack.
  9. For the frosting: Add powdered sugar, butter, vanilla extract, milk and red food coloring into the mixer. Turn the mixer on low power and combine the ingredients together until you get a smooth consistency and the frosting appears pink. Frost the cake with a spatula.
