Ingredients
For the cake:
2 cups white flour
¾ cups white sugar
1/3 cup butter, softened
1 tsp. vanilla extract
2 ¼ tsp. baking powder
1 ¼ tsp. grated lime
1 large egg
½ tsp. salt
1 tsp. red food coloring
For the frosting:
2 cups powdered sugar
½ cup butter, softened
2 tsp. vanilla extract
3 tbsp. milk
1 tsp. red food coloring
Directions:
- Grease the 8-inch baking pan with butter or vegetable oil. Set aside.
- In a mixer, beat the butter on medium power for 1 minute. Add sugar; cream them together until the mixture is light and fluffy.
- In a medium sized bowl, mix flour, baking powder and salt together until well incorporated. Set aside.
- Beat the egg, grated lime and vanilla extract together in a small bowl. Add to the butter mixture and mix together.
- Gradually add the flour mixture to the butter mixture. Switch to low power and mix until well incorporated. The mixture should have smooth consistency after mixing.
- Pour the mixture into an 8-inch baking pan.
- Add the red food coloring into the mixture; use a fork to swirl it around to make the marble effect.
- Bake at 350 degrees F for about 40 minutes until it is golden brown. Let cool and transfer from the pan to the cooling rack.
- For the frosting: Add powdered sugar, butter, vanilla extract, milk and red food coloring into the mixer. Turn the mixer on low power and combine the ingredients together until you get a smooth consistency and the frosting appears pink. Frost the cake with a spatula.
