Coxinhas are the new chicken filled croquettes that will make you look as a masterchef in front of all your friends!
Ingredients:
- 2 large chicken breast
- 2 1/2 cups of all purpose flour
- 1 cup of bread crumbs
- 2 eggs
- 1 onion, cubed
- 2 tbsp of parsley, chopped
- 2 tbsp of mayo
- Salt to taste
- Pepper to taste
- Oil to fry
Instructions:
- In a large pot, over medium heat, add about 3 cups of water and a pinch of salt, boil the chicken until completely cooked. Reserve the water because you will use it later. Set aside the chicken to cool down.
- Again, place the pot over medium heat and when boiling, add the 2 1/2 cups of all purpose flour. Stir to form a dough.
- When the dough is ready, place it in a bowl and let it cool down.
- Take a large bowl and shred the chicken.
- Add the cubes of onion, chopped parsley, 2 tbsp of mayo (cream cheese works great too), salt and pepper to taste. Stir to combine.
- Prepare to assemble your coxinhas, in a plate add the bread crumbs and in a small bowl, whisk the 2 eggs.
- Take about 4 tbsp of dough and create a ball. Hollow the middle with your fingers.
- Add 2 tbsp of chicken mixture inside the hollow of the dough.
- Press the chicken mixture inside the dough and carefully close the dough creating a drop shape. Repeat with all the dough and chicken.
- Cover each croquette in the egg and then in breadcrumbs. If you want to have extra crispy ones, repeat this step twice with each one.
- Fry until golden and place in a paper towel to absorb any oil excess before serving.
