Ingredients:

  • 2 large russet potatoes
  • 1 tbsp of Parmesan cheese
  • 1 tsp of salt
  • 1/2 tsp of chili powder
  • 1/2 tsp of garlic powder
  • A pinch of black pepper
  • Oil to fry (optional)

Instructions:

  1. In a small bowl, mix all your condiments and set aside to use later. If you want to add any extra after the ones in the list, go ahead!
  2. Wash really well your potatoes, specially if you want to keep the skin. If you rather potatoes without skin, peel them using a potato peeler or a really sharp knife.
  3. After washed and peeled, cut your potatos as thick as you wish. The thinner the crispier but medium ones not only crispy but also soft inside.
  4. Add your cut potatoes fries in a large bowl, cover them with really cold water.
  5. Place bowl into the refrigerator for at least an hour.
  6. After the potatoes soaked the cold water for an hour, place them in a paper towel to dry. Make sure to dry them well, specially if you are planning to fry them instead of making them in the oven.
  7. In a new dry bowl, add the potatoes again and sprinkle them with the condiment mixture.
  8. In a large skillet, over medium heat, add a generous amount of oil. When hot start to cook your fries. Do not add many at a time or the oil temperature will drop and affect the crispiness of the fries.
  9. When ready, place in a paper towel to absorb the oil and serve!

If you wish to make them in the oven instead, preheat the oven to 180 degrees C. and bake them for 20 minutes, take them off the oven, flip them and bake again for an extra 10 minutes or until golden.
