Healthy Egg and Avocado Sandwich

Ingredients:

  • 2 slices of whole grain bread
  • ¼ cup of avocado, mashed
  • 3 eggs
  • ½ tbsp of olive oil
  • 1 tbsp of freshly ground black pepper
  • Salt to taste

Directions:     

  1. In a hot pan, add olive oil.
  2. Add egg to the hot olive oil.
  3. Add salt and black pepper to the egg mixture.
  4. Give a thorough mix and turn off the heat.
  5. In another bowl, add avocado, salt and pepper.
  6. Mix them thoroughly and keep aside.
  7. Spread the avocado mixture on whole grain bread slices.
  8. Add scrambled egg on top and serve.
