Take your mexican food love to another level with these amazing homemade tostadas. This recipe calls for an arepa as the base just to make it fun and different, the combination is incredible.
Ingredients:
- 3 cups of pre-cooked corn flour
- 3 cups of water
- 3 cups of meat, shredded
- 2 large tomatoes, diced
- 1 medium onion, diced
- 1/2 cup of cilantro, chopped
- 1/2 cup of sour cream
- 1 small lettuce
- 2 tbsp of lemon juice
- Salt to taste
Instructions:
- In a large bowl, add the pre-cooked corn flour, water and salt to taste.
- Using your clean hands, start to combine the ingredients until they form a soft dough. Knead it for about 3-5 minutes. Make sure the dough has no lumps from the flour, break them with your fingers if you find any.
- Shape the dough into golf size balls and with the palm of your hands flat them to form a disc.
- In a non stick skillet, over low heat, place your corn flour discs and cook for 5 minutes. Flip them to cook the other side as well. When golden and firm on each side, turn off the heat and set aside.
- While your base is being cooked, cut all your veggies in tiny pieces. Don’t forget to remove the tomato seeds to avoid mixing them with the rest of the ingredients.
- Add the tomatoes, onions and cilantro into a bowl; mix to combine and pour the lemon juice on top.
- Take your corn disc and start to assemble the tostada in this order: lettuce, pico de gallo, shredded beef or chiken and finally drizzle some sour cream on top to give it extra flavor!
Tip: If you want to make this recipe even more yummy, add some guacamole!
