Homemade Caesar Salad with Chicken

This salad is such a classic that it can be made in many different presentations and will always be yummy! I will show you how to make the dressing and even the croutons from scratch.

Ingredients:

For the salad:

  • 1 chicken breast, medium
  • 1 romaine lettuce head, chopped
  • Parmesan cheese as desired
  • 4 tbsp of white vinegar
  • Salt to taste
  • Black pepper to taste

For the dressing:

  • ¾ cup of olive oil
  • ¼ cup of lemon juice
  • 3 tbsp of mayo
  • 2 tbsp of mustard
  • 1 tsp of garlic powder
  • Salt to taste
  • Pepper to taste

For the croutons:

  • ½ baguette
  • 2 tbsp of olive oil
  • A pinch of salt
  • A pinch of pepper

Instructions:

For the croutons:

  1. Preheat the oven to 180 degrees C.
  2. Cut the baguette into tiny squares and place them in a, previously greased, baking sheet.
  3. Drizzle the olive oil all over the bread pieces. Make sure to cover all of them.
  4. Sprinkle some salt and pepper to taste.
  5. Bake for 15-20 minutes depending on how crispy you want the croutons.
  6. When ready, set aside to cool down.

For the dressing:

  1. In a medium bowl, add all your ingredients and whisk until creamy. You can also do this using a food processor or even a blender.
  2. If you want the dressing thicker, add more mayo.

For the salad:

  1. In a large skillet, over medium heat, cook your chicken breast using just salt and pepper. If you want to add any other spices, feel free to do it. When ready, set aside to cool down and cut it into pieces or shred it.
  2. To wash the lettuce, place it in a deep bowl, add water until completely covered and pour about 4 tbsp of white vinegar, stir. Let it rest for 5 minutes and then strain it.

In a large salad bowl, add the lettuce, chicken, Parmesan cheese, dressing and croutons!
