Homemade Chimichurri

Chimichurri is a traditional sauce from Uruguay and Argentina. Perfect to combine with different kind of meat and also with different dishes like empanadas! It is really versatile and gives a ton of flavor to other recipes.

Even though it has many ingredients, it is super easy to make and it is totally worth it.

Ingredients:

  • ½ cup of extra virgin olive oil
  • ½ cup of parsley, chopped
  • 3 tbsp of oregano leaves, chopped
  • 3 tbsp of chives, chopped.
  • 3 tbsp of red wine vinegar or white vinegar
  • 2 garlic cloves, minced
  • 2 tbsp red pepper, crushed
  • 2 tbsp of lime juice
  • 1 tsp of dehydrated garlic
  • Salt to taste
  • Black pepper to taste

Instructions:

  1. First of all, you will need to chop really well the parsley, oregano and chives. I like doing this by hand because I think having slightly different sizes of ingredients gives it a better texture but you can use a food processor or a blender as well.
  2. In a large bowl, whisk together the red wine vinegar and lime juice. You can use white vinegar too.
  3. Add the chopped ingredients, minced garlic cloves, red pepper, dehydrated garlic, salt and black pepper. Stir to combine. You don’t need to overmix it, just stir enough to get an even combination of colors and flavors.
  4. Pour the mixture into a tall glass jar.
  5. Add the olive oil to the jar and let it sit for at least 3 hours before using. It is important to make it ahead to get a richer flavor. Some people recommend doing it a day before.
  6. Store it in a glass jar to guarantee it lasts more. Keep it in the refrigerator.
