Homemade Tequeños

These Tequeños are perfect to make as an appetizer or to share with your friends. Forget about regular mozzarella sticks and cook something different!

Ingredients:

  • 2 cups of all purpose flour
  • 1 egg
  • 1/4 cup of butter
  • 1/4 cup of water
  • 1 tsp of baking powder
  • A pinch of salt
  • 12 oz of cheese, one large cube
  • Oil to fry

 

Instructions:

 

  1. In a bowl, sift the all purpose flour, baking powder and salt. This step is important to avoid lumps in the dough. Stir to combine.
  2. Melt the butter either in the microwave or over low heat. Set aside to cool down.
  3. In a large flat surface, place the all purpose flour mixture in the shape of a mountain. With your finger, create a hole in the center, like making a volcano.
  4. In a cup whisk the egg and pour it inside the volcano.
  5. Also, pour inside the volcano the room temperature butter and water. It might look messy but it is really easy and fun to make.
  6. With your hands, start to incorporate the all purpose flour with the wet ingredients. Mix until you get an even dough ball. If you need more liquid, add a bit of water and keep mixing.
  7. Knead the dough for about 5-8 minutes until no sticky.
  8. Sprinkle more all purpose flour over the flat surface and roll the dough to about 1/4 inch thick.
  9. Cut dough stripes of about one finger wide.
  10. The cheese needs to be a firm one that melts easily but that you can also cut in a stick and it will keep the shape.
  11. Cut cheese sticks a little bit less wide than the dough stripes.
  12. Wrap the cheese stick with the doug stripe and make sure to press the end points to close the tequeño.
  13. In a large skillet, over medium heat, add the oil.
  14. When hot, cook the tequeños until completely golden.
  15. Serve with your favorite dips!
